  1. Any salt of nitric acid, containing the NO3^-
  2. ion. Nitrates of various kinds are used in
  3. explosives, in the chemical industry, in
  4. curing meat (see nitre), and as inorganic
  5. fertilizers. Nitrates in the soil, whether
  6. naturally occurring or from inorganic or
  7. organic fertilizers, can be used by plants to
  8. make proteins and nucleic acids. Being
  9. soluble in water, nitrates are leached out by
  10. rain into streams and reservoirs. High levels
  11. are now found in drinking water in arable
  12. areas. These are harmful to newborn babies,
  13. and it is possible that they contribute to
  14. stomach cancer, although the evidence for
  15. this is unproven. The UK current standard is
  16. 100 milligrams per litre, double the EC
  17. limits to be implemented by 1993.
